38 | www.probussouthpacific.org HEALTH Snack away! Enjoy a sweet but tooth-friendly snack, with this delicious almond and berry slice. Blackberry and almond triangles Ingredients 200g almond flakes 2tbs milk 2tsp vanilla extract 210g unsalted cooking butter, at room temperature 165g sugar substitute (we use Splenda) 225g plain flour 40g cornflour 160g sugar-free blackberry jam Icing sugar, sugar-free ice-cream and baby mint leaves to serve (optional) Method Lightly grease and line a 24cm x 20cm baking tin, leaving a few centimetres of baking paper overhanging on all sides. Preheat the oven to 180°C. Make the almond topping: add the almonds, milk, half of the vanilla, 60g of the butter and 55g of the Splenda to a small saucepan and warm over low heat until the butter melts. Set aside to cool. Make the base: sift the flour and cornflour together. Beat the remaining vanilla, butter and sugar until pale in colour and a creamy texture. Add half of the sifted flour and mix until just combined, then repeat with the remaining flour. Press the base evenly into your pre-prepared baking tin, making sure to press it into the corners, and bake until light golden, approximately 12 minutes. Remove from the oven and leave the base to cool in the tray for 10 minutes. Once cool, spread the blackberry jam over the base and then top with the prepared almond mix. Bake again until golden, approximately 25 minutes. Once cool, use the overhanging baking paper to lift the slice neatly from the tray, and cut into triangles with a very sharp knife. Serve simply with a light dusting of icing sugar or go all out with a scoop of sugar-free vanilla ice-cream and a few small mint leaves. months. “In extreme cases or if you’re having problems keeping your teeth clean, seeing your dentist every three months may be suitable,” explains Dr Alexander. Your dentist might recommend a rinse enriched with fluoride to help combat tooth decay, or an antibacterial one to help ward off gum disease.
